Browned Butter Chocolate Chip Cookies

There is something about chocolate chip cookies that just make me smile! They remind me of home, of my mom, of the millions and millions that I made while working on my families guest ranch in Idaho to have ready for the guests when they got back from a long hard horse ride, of my little brother who didn't like oatmeal or nuts in cookies, and of my friend Melissa who always thought we were crazy for mixing the cookie dough by hand. I make cookies A LOT lately as a quick and easy treat/dessert for my family, to take to neighbors, and to send in the mail to my brother who is serving a two year mission for our church. I have sent him every kind of cookie that I make but with this recipe got "those cookies were amazing...they were soooo good, they didn't last long at all" instead of the usual "thank you so much for they yummy cookies". So try them today, and share some with your neighbors or a missionary, because if you don't you will eat them all...they are really good:)

1 cup real butter
1 cup sugar
1 cup DARK brown sugar
1 egg
1 egg yolk
2 tsp. vanilla
1 tsp. baking soda
1 tsp. salt
2 1/2 cups flour

Slice your butter into cubes and place 1/2 cup in small pan on stove top and the rest of the butter in a mixing bowl. Melt butter and stir continually until butter turns a golden brown color {and smells like heaven}. Take off stove immediately so you don't burn your butter {this can happen quite easily} and pour onto the cubed butter in your mixing bowl. Mix together and add and mix in your sugars. Add eggs and vanilla. Stir for one minute then let mixture rest while you mix together your dry ingredients in another bowl. Then mix for another minute and then let set a minute. Dump in your dry ingredients all at once along with 3/4 bag of semi-sweet chocolate chips. Stir with fork or wooden spoon just enough to have no flour clumps {stir as little as possible at this point}. Bake at 375 for 8 min.

  3. NOTE: Last time I made them I put 2 cups and just a little bit (not quite 1/4 cup) and they were perfect.
